One thing we are really worried about is the biting and the "leave it" command. She's gotten into some animal poop (cat maybe?) and has had some on and off diarrhea since then.

But she will not listen to anything regarding the biting! It's horrible since her jaws have become a lot stronger in the last week and a half. I'm at the point where i'm full-out acting like a dog, growling and holding her on her back... even biting her ears!

Please tell me this gets better before she's 80lbs!!?!

It does get better!! Mine didn't listen to anything either and she was as mouthy as they come I'm sure! You just have to keep on it. I would constantly say "NO BITE" and ignore her when she did, I also taught her to take things NICE like treats from our hands and that really helped. She was really bad up to a year old, she will be 2 in June and and rarely does it anymore unless I'm brushing her butt and tail then she gets a little mouthy but it doesn't hurt.
I had to laugh when I read you are starting to act a like a dog yourself, LOL, at one point I actually got mine in a head lock and growled at her and she looked sooo stunned, lol, I think that was the day when she figured I might be the boss
