Old Fresh foods as treats?

We have a new 2 yr old Berner named Bear. We have him on Blue Large Breed and he is eating pretty well after a few days transition to our house (just got him last Wed). I feed him about 1.5 cups in the am and 2.5 at night and that seems to be enough.

As a transition I gave him a little american cheese mixed in his food (he wasn't eating at all the first few days) and am weaning him off (1/2 slice now).

He is slightly interested in people food and I'd like to give him healthy nutritious stuff - can you help with a list of acceptable items? I tried cauliflower last night and that was a no go. LOL

Carrots? Fruits? Anything to avoid? I've read mentions of yogurt - what kind and how much?

I don't mind backing off his food a bit to incorporate some more healthy items.

He has been very well trained both on/off the leash but I can tell he's used to treats then too (he backs off while walking and checks my hand for a treat). After he's totally adjusted to us in the next few weeks, I'd like to reinforce his "heel" and other training. Does anyone have recommendation for treats while training?
